The Mathematician is a result of carefully placing natural variables and winemaking constants in the formula of making wine. Adequate rainfall in winter provided a good start to the growing season. Milder weather during day time and night time temperature below average lead to a slow but ideal ripening season. The fruit was handpicked at optimum flavour ripeness to ensure all the flavour precursor were secured in the small berries. A 12-day ferment at temperatures fluctuating between 25-28 deg C was accompanied with 4 times a day hand plunging. A 30-day post ferment maceration was carried out to achieve a level of tannin structure for the maturation phase of 24 months which was carried out in a combination of 100% new French and American oak.
